The Original Chubby's

The Original Chubby’s has been a Mexican food staple in Denver since 1967. The original building was a carry-out only restaurant. The owner decided he wanted to expand to a sit-down restaurant. The existing building was torn down and a larger restaurant was constructed along with a new parking lot. Root Partnership worked closely with the client and the project architect to create a landscape plan that provided year-round interest, especially around the new outdoor patio space, and provided vegetative visual impact to the busy streetscape of 38th Avenue.
